BBQ Steak Stuffed Burritos with Cheddar and Orange-Jicama Salsa from Betty Crocker's Great Grilling cookbook is a must-try for your next cookout! Brushed with barbecue sauce before grilling, these burritos are bursting with savory-sweet flavors.
Ingredients:
  • 2 tablespoons lime juice
  • 1 boneless beef top round steak, about 1 inch thick (1 lb)
  • 1 can (5 1/2 oz) spicy eight-vegetable juice
  • 1 medium orange, peeled, chopped
  • 1/2 cup chopped peeled jicama
  • 1/4 cup chopped tomatillas
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 small serrano chile, seeded, finely chopped (1 tablespoon)
  • 6 flour tortillas (10 inches in diameter)
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 medium onion, chopped (1/2 cup)
  • 1 medium tomato, chopped (3/4 cup)
  • 1 medium avocado, chopped
  • 3/4 cup spicy barbecue sauce
Instructions:
  • Pierce beef with a fork on both sides. In a shallow nonmetal dish or resealable plastic bag, combine all remaining beef ingredients. Add beef, coat with marinade, cover, and refrigerate for 8-24 hours, turning occasionally.
  • Combine all salsa ingredients in a small nonmetal bowl, blend well. Cover and refrigerate for at least 2 hours to enhance flavors.
  • Prepare the grill by brushing the rack with vegetable oil and heating the coals or gas grill for direct heat. Wrap the tortillas in heavy-duty foil.
  • Take the beef out of the marinade and place it on the grill over medium heat for 25 to 30 minutes, turning once for medium doneness. After 20 minutes, add the packet of tortillas to the grill and warm them up, turning occasionally.
  • Slice beef thinly, then arrange it along with cheese, onion, tomato, and avocado onto the center of each tortilla. Fold one end of the tortilla up by about 1 inch over the filling, fold the right and left sides over the folded end, overlapping them. Fold down the remaining end and brush the burritos with barbecue sauce.
  • Grill uncovered burritos over medium heat for 5 minutes, turning once, until heated through. Serve with salsa on the side.
