Whip up quick and tasty chicken and corn burritos for easy weeknight dinners.
Ingredients:
  • 8 Chicken Thigh Fillets
  • 485g pkt Mexican-style burrito kit
  • 60ml lime juice
  • 1 corn cob, husk and silks removed
  • 2 avocados, stoned, finely chopped
  • 1/2 small red onion, finely chopped
  • 62.50 ml coriander leaves
  • 250g cherry tomatoes, quartered
  • 60g baby spinach & rocket salad
  • Sour cream, to serve
  • Thinly sliced red chilli, to serve
  • Lime halves, to serve
Instructions:
  • Toss chicken with seasoning sachet, half of the lime juice, and half of the oil in a large bowl until well coated.
  • Heat up the barbecue or chargrill plate until it's nice and hot. Grill the chicken for about 5 minutes on each side until it's fully cooked. Remove the chicken from the heat and place it on a plate. Cover it with foil and let it rest for 5 minutes before serving.
  • While your steak is searing on the barbecue, grill the corn for 5 minutes until it's tender. In a mixing bowl, toss together avocado, onion, coriander, and tomato. Cut the kernels off the cobs and mix them in with the avocado. Finish it off by drizzling lime juice and oil over the top and season to taste.
  • Follow the packet directions to cook the tortillas from the burrito kit. Slice the chicken thickly. On a work surface, place the wraps and add the spinach, rocket leaves, chicken, and avocado mixture on top. Season to taste. Finish with a dollop of sour cream and a drizzle of salsa from the burrito kit. Serve with chili and lime wedges.
