Quick & easy spicy chicken burritos with a saucy kick.
Ingredients:
  • 2 teaspoons Gay Lea Butter
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch cubes
  • salt and ground black pepper to taste
  • 2 cups shredded Ivanhoe Old Cheddar, divided
  • 1 cup diced green pepper
  • 0.66666668653488 cup Gay Lea Sour Cream
  • 0.5 cup sliced black olives
  • 0.33333334326744 cup salsa
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • 4 large flour tortillas
Instructions:
  • Preheat the oven to 350°F (180°C) to ensure the perfect cooking temperature.
  • In a large skillet over medium-high heat, melt butter until it sizzles. Cook chicken until it's no longer pink inside, for about 8 minutes. Season generously with salt and pepper, then transfer to a roomy bowl.
  • Combine 1 cup shredded cheese, bell pepper, sour cream, olives, salsa, jalapeño, and cilantro with the chicken, stirring well.
  • Spoon 1/4 of the savory chicken mixture onto a tortilla. Roll and fold the tortilla to perfectly seal the delicious filling, then lay it seam-side down in a compact baking dish. Repeat with the rest of the tortillas. Generously sprinkle the remaining cheese on top.
  • Bake in the middle of the preheated oven for approximately 20 minutes, or until the cheese is melted and the tortillas are crispy.
