Fiesta Chicken and Rice

Spicy chicken and rice Mexican dinner ready in 35 minutes.
Ingredients:
  • 1 1/4 cups water
  • 1 can (5 1/2 ounces) spicy eight-vegetable juice
  • 1 package (4.9 ounces) rice and vermicelli mix with chicken broth and broccoli
  • 1 1/2 cups cubed cooked chicken
  • 1 cup frozen chopped bell peppers (from 10-ounce bag), thawed
Instructions:
  • In a 3-quart saucepan, bring water, vegetable juice, rice-vermicelli mix, and seasoning packet to a boil. Stir occasionally and then reduce the heat.
  • Simmer covered for 15 to 20 minutes, stirring occasionally, then add chicken and bell peppers and heat through.
