Fiesta Chicken and Black Beans

Vibrant one-pan chicken dish with black beans, red onion, bell pepper, and avocado - a quick and delicious meal!
Ingredients:
  • 2 tablespoons GOYA® Extra Virgin Olive Oil, divided
  • 4 (5 ounce) boneless, skinless chicken breast fillets
  • GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
  • 0.5 red onion, finely chopped
  • 0.5 red bell pepper, finely chopped
  • 1 (15.5 ounce) can GOYA® Low Sodium Black Beans, drained and rinsed
  • 0.5 cup fresh corn kernels
  • 1 avocado, finely chopped
  • 1 tablespoon GOYA® Lemon Juice
  • 1 tablespoon finely chopped fresh cilantro
Instructions:
  • In a large skillet over medium-high heat, warm 1 tablespoon oil. Season chicken with Adobo seasoning, then cook in the hot oil until golden brown and fully cooked, flipping once, for 5 to 7 minutes. Once done, transfer the chicken to a plate and cover loosely with foil to keep warm.
  • Heat the final tablespoon of oil in the skillet, then sauté onions and peppers until tender, approximately 5 minutes. Add black beans and corn, cooking until warmed through for about 2 minutes. Remove from heat and mix in avocado, lemon juice, and cilantro until well combined.
  • Plate the chicken onto 4 serving dishes and generously spoon the flavorful black bean mixture over the top. Serve immediately while still warm.
