Chicken and Black Bean Burritos

Make a flavorful chicken burrito in 30 minutes - perfect for a quick fiesta dinner!
Ingredients:
  • 1 package (7.6 oz) Old El Paso™ Spanish Rice
  • 1 tablespoon vegetable oil
  • 1 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 2/3 cup water
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 medium red bell pepper, chopped (1 cup)
  • 1/3 cup sliced green onions (about 5 medium)
  • 1/2 cup chopped fresh cilantro
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count), heated as directed on package
  • 1 1/2 cups shredded Cheddar cheese, taco-seasoned cheese blend or Mexican cheese blend (6 oz)
  • Guacamole
  • Salsa
  • Sour cream
Instructions:
  • Prepare rice in a 3-quart saucepan per package instructions, excluding the butter.
  • In a 10-inch skillet, warm oil for 1 to 2 minutes over medium-high heat. Add chicken and cook for 3 to 4 minutes, stirring occasionally, until no longer pink in the center. Mix in taco seasoning and water. Cook for another 3 to 4 minutes, stirring occasionally, until most of the liquid is absorbed.
  • Combine the savory chicken mixture, flavorful beans, vibrant bell pepper, tangy onions, and fresh cilantro into the steaming rice. Heat and stir as needed until all ingredients are heated through to perfection.
  • Ladle a generous scoop of chicken mixture in the center of each warm tortilla. Sprinkle with cheese. Fold and tuck the ends to encase the filling neatly. Serve with guacamole, salsa, and sour cream on the side.
