Delicious Mexican tostadas with black beans, chicken, cheese, and tomato - ready in just 20 minutes.
Ingredients:
  • 1 package (14 oz) Old El Paso™ Enchilada Dinner Kit
  • 2 cups chopped or shredded deli rotisserie chicken (from 2-lb chicken)
  • 1 cup canned seasoned black beans
  • 1/2 cup crumbled queso fresco cheese (2 oz)
  • 1 small tomato, chopped (1/2 cup)
  • Fresh cilantro leaves, if desired
Instructions:
  • Preheat oven to 375°F. Spread the tortillas from the dinner kit on a large baking sheet. Coat both sides of the tortillas with cooking spray. Bake for 5 to 6 minutes, flipping halfway through, until lightly golden around the edges.
  • In a 2-quart saucepan, combine chicken, black beans, seasoning mix, and most of the enchilada sauce. Cook over medium-low heat for about 5 minutes, stirring occasionally, until heated through.
  • Spread a generous 1/3 cup of the flavorful chicken mixture on each tortilla, drizzle with a touch of the remaining enchilada sauce, sprinkle with cheese and tomato, and finish with a vibrant garnish of fresh cilantro leaves. Serve promptly to enjoy at its best.
