Delicious roasted chicken and black bean rice bowl, perfect for any day of the week!
Ingredients:
  • 3 cups cooked brown rice
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, coarsely chopped, plus more for garnish
  • 1 (15-ounce can) black beans, rinsed and drained
  • 1 cup frozen corn
  • 2 tablespoons red onion, chopped
  • 1 teaspoon ground cumin
  • Pinch salt (optional)
  • 2 (9-ounce) packages PERDUE® SHORT CUTS® CARVED CHICKEN BREAST, SOUTHWESTERN STYLE
  • 1 pint cherry tomatoes, halved
  • 1/2 cup store-bought guacamole
Instructions:
  • Revitalize the rice: If it's not hot, warm it in the microwave with a couple of teaspoons of water to prevent it from drying out. Then, mix in the lime juice and fresh cilantro.
  • Heat up the beans and corn: Combine beans, corn, onion, and cumin in a small saucepan over medium heat until warmed through. Taste and sprinkle with a pinch of salt, if desired. As an alternative, cover and microwave for 2 minutes or until heated.
  • Microwave the chicken: Place the chicken in a microwave-safe bowl, cover with a paper towel, and heat for 2 minutes until hot.
  • Prepare the bowls by layering 1/2 cup of rice, 1/2 cup of beans, and chicken strips in each bowl. Top each bowl with 1/4 cup cherry tomatoes and 2 tablespoons guacamole. Garnish with cilantro before serving.
