Grilled chicken with zesty seasoning, sun-dried tomatoes, and black olives.
Ingredients:
  • 6 boneless, skinless chicken breast halves
  • 2 tablespoons olive oil
  • salt and ground black pepper to taste
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon crushed red pepper flakes
  • 1 (8 ounce) jar sun-dried tomatoes, packed in oil - drained, oil reserved
  • 1 (4 ounce) can sliced black olives, drained
  • 6 hoagie rolls, split lengthwise
Instructions:
  • Preheat the grill to medium-high heat and brush the grate lightly with oil. Gently flatten the chicken and trim any excess fat. Brush lightly with olive oil and season both sides with salt, pepper, garlic powder, onion powder, oregano, and red pepper to taste. Set aside.
  • Combine sun-dried tomatoes and olives in a bowl. Drizzle with 2 1/2 tablespoons of tomato oil. Season with salt and pepper to taste; set aside.
  • Grill the chicken for 10 to 12 minutes, turning it to create cross-hatch grill marks. Serve the cooked chicken on rolls, each topped with a generous spoonful of tomato mixture.
