Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

Grilled chicken, feta, and spinach wrapped in a tortilla and grilled to perfection.
Ingredients:
  • 2 (4 ounce) skinless, boneless chicken breast halves
  • 0.25 cup sun-dried tomato dressing
  • 8 sun-dried tomatoes (not oil packed)
  • 1 cup boiling water
  • 0.33333334326744 cup crumbled feta cheese
  • 4 cups loosely packed torn fresh spinach
  • 4 (10 inch) whole wheat tortillas
Instructions:
  • Take the chicken breasts and 1/4 cup of dressing in a large resealable plastic bag. Seal it and let it marinate in the refrigerator for several hours.
  • Preheat grill on high heat. Soak sun-dried tomatoes in hot water in a small bowl for 10 minutes. Drain and thinly slice the tomatoes.
  • Prepare the grill grate by lightly oiling it. Dispose of the marinade and then grill the chicken for 12 to 15 minutes, turning it once, until thoroughly cooked.
  • Cut the chicken into strips and combine it in a medium bowl with sliced tomatoes, feta, and spinach. Toss everything with the remaining 1/4 cup of dressing. Divide the mixture between the four tortillas and wrap them up. Enjoy cold, or briefly grill for a warm and crispy finish.
