Chicken Fiesta Salad

Zesty Mexican black bean, corn, and grilled chicken salad - vibrant and flavorful all-in-one meal.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 (1.27 ounce) packet dry fajita seasoning, divided
  • 1 tablespoon vegetable oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (11 ounce) can Mexican-style corn
  • 0.5 cup salsa
  • 1 (10 ounce) package mixed salad greens
  • 1 onion, chopped
  • 1 tomato, cut into wedges
Instructions:
  • Massage half of the fajita seasoning onto the chicken. Heat oil in a skillet over medium heat, and cook the chicken for 8 minutes on each side until juices run clear. Set aside.
  • Combine beans, corn, salsa, and remaining half of fajita seasoning in a large saucepan. Warm over medium heat.
  • Combine the greens, onion, and tomato to create the base of the salad. Add the chicken on top and drizzle the bean and corn mixture as dressing.
