Rustic chicken and potato dinner with pantry staples.
Ingredients:
  • 1 box (4.7 oz) Betty Crocker™ scalloped potatoes
  • 2 1/4 cups boiling water
  • 3/4 cup milk
  • 1/3 cup shredded Monterey Jack cheese
  • 1/3 cup shredded Cheddar cheese
  • 1/3 cup thick & chunky salsa
  • 2 cans (5 oz each) chunk breast of chicken, drained
Instructions:
  • Preheat the oven to 400°F. Whisk together the Sauce Mix, boiling water, and milk in a 2-quart casserole dish. Add the Potatoes and any remaining ingredients, stirring well to combine.
  • Bake for about 35 minutes uncovered until the potatoes are tender. Allow it to stand for 5 minutes before serving to let the sauce thicken.
