Cheesy Potatoes and Chicken Fiesta

Effortlessly whip up a delicious chicken and potato dinner with pantry staples.
Ingredients:
  • 1 box (5 oz) Betty Crocker™ cheesy scalloped potatoes
  • 2 1/4 cups boiling water
  • 3/4 cup milk
  • 1/3 cup shredded Monterey Jack cheese
  • 1/3 cup shredded Cheddar cheese
  • 1/3 cup thick & chunky salsa
  • 2 cups diced cooked chicken (8 oz)
Instructions:
  • Preheat oven to 400°F. In a 2-quart casserole dish, whisk together Sauce Mix, boiling water, and milk. Add Potatoes and remaining ingredients, stir well.
  • Bake without a cover for around 35 minutes, or until the potatoes are soft. Stir gently and allow it to sit for 5 minutes before serving to let the sauce thicken.
