Try this delectable crock pot Parmesan garlic chicken and potatoes for a quick and easy meal. Enjoy tender, juicy chicken and cheesy potatoes in a creamy, savory sauce.
Ingredients:
  • 2 pounds potatoes, cut in 1 1/2 -2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon Paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce, such as Buffalo Wild Wings® Parmesan Garlic
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley, or to taste (optional)
Instructions:
  • Mix together potatoes, olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika in the slow cooker until everything is evenly coated. Place chicken pieces on top and season with the remaining salt and pepper. In a bowl, combine Parmesan garlic sauce and water, then pour over the chicken and potatoes.
  • After 4 hours on High (or 6 hours on Low), check for doneness of the chicken and tenderness of the potatoes. In the last 20 minutes of cooking, mix in mozzarella and Parmesan, cover, and cook further. Serve topped with parsley.
