Succulent pork ribs slow-cooked until tender in a tangy barbecue sauce, served with a side of crispy garlic parmesan potato wedges.
Ingredients:
  • 1kg potatoes, finely sliced
  • 1 onion, sliced
  • 370g cooked chicken
  • 125.00 ml grated tasty cheese
  • 1/2 tsp cracked black peppercorns
  • 20.00 ml fresh chives, chopped
  • 300ml light cream, or light evaporated milk
  • 1.25 gm paprika
Instructions:
  • Preheat the oven to 180C and lightly grease a 6-cup ovenproof dish.
  • Layer half of the potato slices on the bottom of the dish, followed by the onion, chicken, cheese, peppercorns, and chives. Drizzle half of the cream over the ingredients. Add the remaining potato slices, pour the rest of the cream, and sprinkle with paprika.
  • Roast in the oven for approximately 1 1/2 hours until golden brown and the potatoes are fork-tender.
