Elevate slow cooker cheesy smashed potatoes with a garlicky twist, the ultimate side dish.
Ingredients:
  • 8 medium unpeeled russet potatoes, cut into 3/4- to 1-inch pieces (8 cups)
  • 2 cloves garlic, finely chopped
  • 1/4 cup butter or margarine
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup water
  • 1/2 cup half-and-half
  • 3/4 cup shredded Parmesan cheese
  • 1/4 cup chopped fresh basil leaves
Instructions:
  • Add the potatoes to a large slow cooker, then mix in the garlic, butter, salt, pepper, and water.
  • Cook with the lid on over high heat for 4-6 hours, or until the potatoes are tender.
  • Keep potatoes undrained. Use a potato masher to lightly mash them. Incorporate half-and-half and cheese, continue mashing until reaching desired consistency with some lumps. Mix in basil right before serving. Potatoes can be kept warm on low heat for up to 2 hours.
