Instant Pot Chicken Burrito Bowl: Flavorful fillings from a traditional burrito transformed into a quick and delicious meal using pressure cooking.
Ingredients:
  • 1 cup white rice
  • 1.25 cups water
  • 1 tablespoon taco seasoning
  • 1 tablespoon tomato powder
  • 2 (4 ounce) skinless, boneless chicken breasts, cubed
  • 0.75 teaspoon garlic salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon butter
  • 0.25 cup salsa
  • 0.5 cup black beans, drained
  • 0.5 cup corn
Instructions:
  • Mix together the rice, water, taco seasoning, and tomato powder in a 7x3-inch cake pan or oven-safe bowl until the rice is evenly coated.
  • Coat chicken breast pieces evenly with a flavorful blend of garlic salt and black pepper in a bowl.
  • Preheat a multi-functional pressure cooker like an Instant Pot using the Saute function. Melt butter, then add salsa and chicken, stirring to combine. Place separate small silicone bowls of black beans and corn on opposite sides in the pot next to the chicken. Insert an elevated trivet and set a container of rice on top. Lock the lid, choose high pressure, and set the timer for 4 minutes. Let pressure build for 10-15 minutes.
  • Follow the manufacturer's instructions for natural pressure release, approximately 11 minutes. Unlock and remove the lid, then take out the rice from the trivet and remove the trivet. Mix corn and black beans with the chicken in a blender.
  • Distribute rice evenly among 4 serving bowls, then spoon the chicken mixture over the top.
