Easy and refreshing Mexican-inspired summer dish.
Ingredients:
  • 5.00 gm smoked paprika
  • 60ml olive oil
  • 1kg chicken thigh fillets, cut into 2cm-thick slices
  • 10 soft flour burritos
  • 1/2 bunch watercress, trimmed
  • Creme fraiche or natural yoghurt, to serve
  • 3 medium ripe tomatoes, finely chopped
  • 1 small Spanish onion, finely chopped
  • 1 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 1 small red chilli (or to taste), finely chopped
  • 1 avocado, peeled, coarsely chopped
  • 82.50 ml chopped coriander
  • 36.40 gm olive oil
Instructions:
  • Preheat the barbecue or chargrill pan on high heat. To make the salsa, mix together tomatoes, onion, lime rind and juice, chili, avocado, coriander, and oil in a bowl. Adjust the seasoning with salt, pepper, and sugar to taste.
  • In a medium bowl, mix together paprika and oil. Add chicken, sprinkle with salt and pepper, and toss gently to coat. Grill chicken on a barbecue or chargrill pan, turning occasionally, for 8-10 minutes until golden and cooked through. Transfer chicken to an oven tray, cover with foil, and keep warm.
  • Char-grill or barbecue burritos until they have a delicious charred finish.
  • Place the burritos on plates and layer with chicken, salsa, watercress, and a dollop of creme fraiche. Fold to seal and enjoy.
