Luscious lentils elevate these zesty burritos with their nutty crunch.
Ingredients:
  • 500g beef rump steak
  • 5.00 gm ground cumin
  • 80ml (1/3 cup) olive oil
  • 2 ripe avocados, mashed
  • 1/2 bunch fresh coriander, leaves picked, chopped
  • 400g can lentils, rinsed, drained
  • 1 long fresh red chilli, seeded, thinly sliced
  • 4 flour tortillas
  • 60g baby rocket leaves
Instructions:
  • Preheat a barbecue grill or chargrill on high heat. Season both sides of beef generously with cumin and a sprinkle of salt and pepper. Drizzle 2 teaspoons of oil over the beef. Grill for 3-4 minutes on each side for a medium cook or until done to your preference. Place the beef on a plate, cover with foil, and let it rest before serving.
  • In a bowl, mix together lemon juice, garlic, and the remaining oil. Add the avocado to the bowl. Stir in 2 tablespoons of the lemon mixture and half of the coriander. Season with salt and pepper to taste.
  • Mix together the lentils, chili, the rest of the lemon dressing, and fresh coriander in a bowl. Season to taste.
  • Grill tortillas in batches for 30 seconds on each side until lightly charred. Keep warm by covering with a tea towel on a plate.
  • Thinly slice the beef. Distribute tortillas evenly onto plates. Layer with avocado and lentil mixtures, beef, and arugula.
