Spicy beef filling with veggies and taco seasoning wrapped in flour tortillas for a flavorful burrito.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 4 tomatoes, chopped
  • 2 cups chopped cooked roast beef
  • 1 (8 ounce) jar prepared taco sauce
  • 1 (4 ounce) can diced green chile peppers
  • 0.5 teaspoon cumin
  • 0.125 teaspoon red pepper flakes, or to taste
  • 6 (7 inch) flour tortillas, warmed
  • 1.5 cups shredded Cheddar cheese
  • 2 cups shredded lettuce
Instructions:
  • In a skillet over medium-high heat, sauté onion and garlic until tender, about 5 minutes. Add tomatoes, roast beef, taco sauce, chile peppers, cumin, and red pepper flakes if using. Bring to a boil, then simmer uncovered on medium heat for 25 minutes until thickened.
  • Lay out tortillas on a tidy work surface. Place approximately 2/3 cup of beef mixture in the middle of each warm tortilla. Evenly sprinkle with cheese and lettuce. Fold the sides and ends to create a neat package.
