Roast beef and semi-dried tomato sandwiches

Perfect for entertaining or on-the-go lunches.
Ingredients:
  • 82.50 gm light spreadable cream cheese
  • 23.40 gm wholegrain mustard
  • 40.00 ml finely chopped semi-dried tomatoes
  • 8 slices wholemeal bread
  • 150g roast beef
  • 40g baby spinach, trimmed
  • 4 slices white bread
Instructions:
  • Combine cheese, mustard, and tomato in a bowl. Season with salt and pepper, then stir together.
  • Lay down 4 slices of wholemeal bread. Spread half of the cheese mixture on top. Layer half of the beef and spinach. Add a layer of white bread slices. Spread the remaining cheese mixture over the bread. Layer on the remaining beef and spinach. Finish with the last of the wholemeal bread slices.
  • Trim the crusts off the sandwiches using a serrated knife. Cut each sandwich into 3 smaller pieces and secure with toothpicks before serving.
