Revamp roast beef leftovers into a delicious grilled haloumi salad.
Ingredients:
  • 240g packet haloumi cheese, drained
  • Olive oil cooking spray
  • 150g mesclun leaves
  • 375g rare roast beef
  • 200g semi-dried tomatoes, drained
  • Crusty bread, to serve
  • 56.88 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • Few drops Tabasco sauce
Instructions:
  • Prepare the dressing by combining all the ingredients, along with salt and pepper, in a screw-top jar. Shake vigorously until fully blended. Set aside for later use.
  • Prepare the barbecue grill by greasing it and preheating on medium-high heat. Pat dry the haloumi with paper towels, then lightly spray it with oil. Cook the haloumi on the grill for 1 minute on each side until it's lightly charred and golden. Slice it into 1cm-thick pieces.
  • On 4 individual plates, artfully lay out the mesclun, beef, tomatoes, and warm haloumi. Drizzle generously with dressing and serve alongside crusty bread.
