Green leaf salad with lime and macadamia dressing

Heart-healthy macadamia oil, rich in monounsaturated fats, helps lower cholesterol levels.
Ingredients:
  • 1 tsp finely grated lime rind
  • 42.00 gm lime juice
  • 80ml oil
  • 2.50 gm caster sugar
  • 250g mesclun salad leaves
  • 45g macadamia
Instructions:
  • In a small jug, mix the lime zest, lime juice, oil, and sugar together. Taste the mixture and season with salt and pepper to enhance the flavors.
  • In a large bowl, combine salad leaves with half of the macadamias. Drizzle with dressing and toss gently. Sprinkle with the rest of the macadamias and serve immediately.
