Elevate your salad with mesclun greens for a gourmet touch.
Ingredients:
  • 4 flour tortillas
  • 2 chicken breast fillets
  • 31.50 gm fresh lime juice
  • 27.30 gm extra virgin olive oil
  • 120g baby mesclun
  • 2 tomatoes, coarsely chopped
  • 1/4 red onion, thinly sliced
  • 1 avocado, coarsely chopped
  • 150g feta, crumbled
Instructions:
  • Heat a large non-stick pan over medium-high heat. Lightly spray oil on 1 tortilla and cook for 2 minutes on each side until golden. Transfer to a plate. Repeat this process with the remaining tortillas in 3 more batches. Let them cool and then break into coarse pieces.
  • After reducing the heat to medium, gently place the chicken in the pan and cook each side for 5-6 minutes until fully cooked. Let the chicken rest briefly before slicing.
  • In a bowl, mix lime juice and oil. In a large bowl, combine tortilla, chicken, mesclun, tomato, onion, avocado, and feta. Season with salt and pepper. Drizzle dressing over the salad and gently toss to mix. Serve the salad on individual plates.
