Aussie-inspired roast beef sandwich with creamy avocado, garlic, tomato, and zesty lime.
Ingredients:
  • 800g-piece beef eye fillet
  • 2 ripe avocados, halved, stones removed, peeled
  • 1 small ripe tomato, finely chopped
  • 1 small fresh red chilli, halved, deseeded, finely chopped (optional)
  • 31.50 gm fresh lime juice
  • 1 butter lettuce, leaves separated, washed, dried
  • 125.00 ml fresh coriander sprigs
  • 8 crusty bread rolls, split
Instructions:
  • Preheat oven to 200°C. Massage beef with oil, then generously season with salt and pepper.
  • 1. Preheat a non-stick frying pan over medium-high heat. Sear the beef for 8 minutes, turning occasionally. Place it in a roasting pan and roast for 15 minutes for medium-rare or until desired doneness. Rest covered with foil for 15 minutes before serving.
  • Combine the mashed avocado with tomato, garlic, optional chili, and lime juice in a bowl. Season with salt and pepper to taste.
  • Slice the beef thinly. Distribute the beef, lettuce, avocado mixture, and coriander evenly among the rolls. Wrap each roll with a strip of baking paper and twist to seal.
