Roast Beef and Swiss Sandwich

Cheesy beef sandwich baked in Bisquick® batter for a delicious twist.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1 cup milk
  • 2 tablespoons yellow mustard
  • 1 egg
  • 1 package (6 oz) thinly sliced cooked roast beef, chopped
  • 1 cup shredded Swiss cheese (4 oz)
  • Freshly ground pepper, if desired
Instructions:
  • Preheat the oven to 350°F and generously grease an 8-inch square (2-quart) glass baking dish with shortening.
  • In a medium bowl, mix together Bisquick mix, milk, mustard, and egg until well combined. Spread half of the batter into a baking dish. Layer half of the roast beef and 1/2 cup of cheese evenly on top. Add the remaining roast beef. Finish by pouring the rest of the batter over the roast beef.
  • Bake until golden brown and center is set, about 45-50 minutes. Sprinkle with 1/2 cup cheese and pepper. Allow to rest for 5 minutes before serving.
