Transform roast beef and Cheddar into a tasty brunch frittata.
Ingredients:
  • cooking spray
  • 10 eggs, beaten
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 2 cups shredded Cheddar cheese
  • 8 ounces deli-style roast beef, chopped
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a 2-quart shallow baking dish with cooking spray.
  • In a large bowl, whisk together eggs and cream of mushroom soup until creamy. Fold in Cheddar cheese, roast beef, and black pepper into the mixture.
  • Bake in a preheated oven until the center is set and the top is golden brown, about 45-50 minutes.
