Baked cauliflower with Parmesan and Cheddar cheese sauce, perfect for serving alongside roast beef or lamb.
Ingredients:
  • 1 head cauliflower, broken into florets
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 1.75 cups 1% milk
  • 2 ounces Parmesan cheese, grated
  • salt and ground black pepper to taste
  • 2 ounces mature Cheddar cheese, grated
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • In a large pot, submerge cauliflower in water and bring to a boil. Cook until just tender, about 8 to 10 minutes. Drain and then transfer to a baking dish.
  • In a small saucepan, gently melt the butter over low heat. Whisk in flour until the mixture is smooth and pulls away from the side of the pan (2 to 3 minutes). Gradually pour in the milk, whisking continuously until the sauce thickens but is still pourable (3 to 4 minutes).
  • Combine Parmesan cheese into the sauce until it melts; season with salt and pepper. Drizzle the sauce over cauliflower and sprinkle Cheddar on top.
  • Bake until the cheese is gooey and golden brown, for about 20 to 25 minutes in the preheated oven.
