Cheesy tomato cauliflower bake topped with Parmesan and mozzarella for a quick and tasty side dish.
Ingredients:
  • 2 tablespoons corn oil
  • 0.5 cup finely chopped onion
  • 3 large cloves garlic, minced
  • 4 cups large cauliflower florets
  • Salt and pepper to taste
  • 1 (24 ounce) jar Classico® Four Cheese Sauce
  • 0.5 cup dry white wine
  • 2 tablespoons chopped fresh parsley, divided
  • 1 tablespoon finely grated Parmesan cheese
  • 1 cup freshly grated mozzarella cheese
Instructions:
  • In a large pan over medium-high heat, saute onion in oil until just starting to soften, about 2 to 3 minutes. Stir in garlic and cook for an additional minute. Add cauliflower, season with salt and pepper, and cook for another minute, stirring to combine well.
  • Gently combine the sauce and white wine, then sprinkle in 1 tablespoon of parsley. Simmer lightly while stirring for 5 minutes.
  • Cover the pan and simmer over medium-low heat until the cauliflower is almost tender, stirring occasionally, for about 10 minutes.
  • Preheat broiler to high. Line a rimmed baking sheet with foil and lightly coat with cooking spray.
  • Spread the cauliflower evenly on the baking sheet with tomato sauce, gently spooning some sauce over the top.
  • Layer the cauliflower with a sprinkle of Parmesan cheese followed by mozzarella cheese.
  • Broil until the cheese is bubbly and slightly browned in spots, approximately 2 minutes, making sure to watch carefully to avoid burning. Allow it to rest for 3 minutes before transferring to a serving platter, then garnish with the remaining fresh parsley.
