Create savory roast beef and Cheddar puff pastry pockets by wrapping tasty beef and cheese in squares of flaky puff pastry for a delicious snack or appetizer.
Ingredients:
  • 1 egg + 1 Tablespoon water
  • 1 (17.3 ounce) package puff pastry sheets
  • 2 Tablespoons all-purpose flour, divided
  • 3 Tablespoons chipotle mayonnaise
  • 9 pieces thinly sliced deli roast beef, about 1/2 pound
  • 5 slices Cheddar cheese
  • 1 Tablespoon Everything Bagel Seasoning
Instructions:
  • Follow the manufacturer's directions to thaw puff pastry sheets until they are cold to the touch but pliable, either in the refrigerator for 3 to 4 hours or at room temperature for 20 to 40 minutes.
  • Preheat your oven to 400°F (200°C) and prepare a sheet pan by lining it with parchment paper.
  • Dust a work surface with 1 tablespoon of flour, spreading it evenly over a 12-inch square area. Lightly flour a rolling pin.
  • Lay out 1 puff pastry sheet on a floured surface and gently roll it into a 12x12-inch square. Use a sharp knife or pizza cutter to divide the pastry into 9 equal squares, approximately 4x4 inches each. Transfer the squares onto the baking sheet.
  • Brush the center of each square with a generous 1 teaspoon of flavorful chipotle mayonnaise, leaving a clean 1/2-inch border on all sides.
  • Place a thin slice of deli beef inside each square, making sure it fits within the border. Top the deli beef with a 3-inch square slice of Cheddar cheese, using any leftover trimmings to cover all 9 squares.
  • Sprinkle the work surface with the remaining flour and give the rolling pin another light dusting of flour to shape the sandwich tops.
  • Lay out the second puff pastry sheet on a floured surface and flatten it into a 12-inch square. Divide it into 9 equal pieces.
  • Create a glossy egg wash by thoroughly whisking together an egg and 1 tablespoon of water using a fork until fully combined.
  • Brush the 1/2-inch clear border of the sandwich bottoms with egg wash. Place the tops over the bottoms, crimp the edges with a fork. Brush the tops with egg wash and sprinkle with bagel seasoning.
  • Bake in the preheated oven for 18 to 20 minutes until golden brown. Then, let it cool on a rack for 8 to 10 minutes before serving warm.
