Beef and Swiss Sandwiches

15-minute cheesy roast beef sandwich with herbed olive mixture, an Italian-inspired delight!
Ingredients:
  • 1/3 cup chopped sweet onion (such as Bermuda or Maui)
  • 1/4 cup (about 12) pimiento-stuffed green olives
  • 1 small clove garlic, peeled
  • 1/8 teaspoon dried oregano leaves
  • 2 teaspoons olive or canola oil
  • 8 slices whole wheat bread
  • 1/3 lb 97% fat-free deli-style thinly sliced roast beef
  • 1/3 lb reduced-fat Swiss cheese (from deli), thinly sliced
  • 1 medium tomato, sliced
Instructions:
  • Combine onion, olives, garlic, and oregano in a food processor. Pulse with quick on-and-off motions, scraping the bowl frequently, until finely pureed. Add olive oil and pulse again until well mixed.
  • Spread a flavorful olive mixture on one side of each bread slice. Layer 4 slices with savory roast beef, rich cheese, and fresh tomato. Place the remaining bread slices on top, olive side down, and slice each sandwich in half.
