Slow-cooked chipotle beef roast: smoky and flavorful. Perfect for meals all week - from tacos to burrito bowls. A delicious time-saver!
Ingredients:
  • 2 cups chopped red onions
  • 2 tablespoons finely chopped canned chipotle chiles in adobo sauce
  • 3 cloves garlic, finely chopped
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 2 to 3 lb boneless beef chuck roast
Instructions:
  • Prepare the slow cooker by generously spraying it with cooking spray. Combine onions, chiles, garlic, taco seasoning mix, cumin, coriander, salt, and broth in the slow cooker, stirring well to combine.
  • Heat oil in a 12-inch skillet over medium-high heat. Sear beef roast for 10 to 13 minutes, flipping once, until both sides are nicely browned. Transfer to slow cooker, ensuring it's well coated in the mixture. Cook on Low for 8 hours.
  • Transfer the beef to a cutting board to cool slightly. Shred the beef, removing any pieces of fat. Mix the shredded beef with 1/2 cup of the cooking liquid, then discard any extra liquid.
