Tender pulled pork barbacoa with a sweet and zesty twist, made easy in a slow cooker with soda, brown sugar, chiles, and salsa.
Ingredients:
  • 2 pounds pork shoulder roast
  • 1.25 cups caffeinated pepper-type soda (such as Dr Pepper®)
  • 1 teaspoon garlic powder
  • 0.75 cup packed brown sugar
  • 1 (4 ounce) can diced green chiles
  • 0.66666668653488 cup salsa verde
  • 1 habanero pepper, diced
  • salt and ground black pepper to taste
Instructions:
  • Lay the pork shoulder with the fat side facing up in the slow cooker. Pour soda over it and sprinkle with garlic powder, 1 teaspoon of salt, and 1/4 teaspoon of pepper.
  • Slow cook until the pork is tender and easily shredded with a fork, around 8 to 10 hours.
  • Remove bones and fat from pork, then shred using 2 forks. Stir pork into its juices along with brown sugar, green chiles, salsa verde, and habanero pepper. Season with salt and pepper, stirring well to combine.
  • "Simmer gently, covered, until flavors meld perfectly, approximately 1 hour."
