Roast beef with horseradish crust recipe

Spicy herb-crusted roast beef pairs deliciously with roasted vegetables for a cozy Sunday meal.
Ingredients:
  • 18.20 gm olive oil
  • 750g beef eye fillet
  • 50g butter
  • 3 tsp fresh thyme leaves
  • 70g (1 cup) breadcrumbs, made from day-old bread
  • 20.00 ml horseradish cream
Instructions:
  • Preheat your oven to 200C (180C fan forced) and line a baking tray with parchment paper.
  • Heat oil in a hot frying pan. Sear the beef on all sides for 6-8 minutes until nicely browned. Place on a prepared tray.
  • Heat pan over medium heat, then add butter, garlic, and thyme. Stir and cook for 1-2 minutes until fragrant and butter is melted. Remove from heat and mix in the breadcrumbs. Season well and stir to combine.
  • Spread horseradish cream on top of the beef using a flat-bladed knife. Press breadcrumb mixture onto the horseradish. Bake for 20-25 minutes until golden and cooked to your preference. Let the beef rest covered with foil for 10 minutes before slicing and serving.
