Bacon-wrapped beef roast marinated in spicy horseradish and mustard - a flavor-packed dish for any occasion.
Ingredients:
  • 5 to 6 rashers bacon, rind removed
  • 50g butter, softened
  • 3 garlic cloves, crushed
  • 23.40 gm seeded mustard
  • 23.40 gm horseradish
  • 1.3kg piece topside beef roast
  • 185.63 gm red wine
  • 446.25 gm beef stock
Instructions:
  • Preheat your oven to 200°C, then lay the bacon slices on a cutting board with a slight overlap.
  • Mix together the butter, garlic, mustard, and horseradish in a bowl. Massage the flavorful mixture onto the beef, then season generously with salt and pepper.
  • Lay the beef on the bacon slices, then wrap the bacon around the beef and tie it with kitchen string at 1cm intervals. Place in a roasting dish and roast for 20 minutes.
  • Lower the oven temperature to 180°C. Pour in the red wine and beef stock. Roast for an additional 50 minutes for a medium-rare finish. Take out of the oven and cover with foil. Let it rest for 15 minutes before slicing.
