Succulent roast dinner with a zesty kick from horseradish and peppercorns.
Ingredients:
  • 3 brown onions, peeled
  • 50g unsalted butter
  • 40.00 ml green peppercorns
  • 46.80 gm bottled grated horseradish
  • 20.00 ml chopped fresh thyme leaves
  • 1kg scotch fillet roast
  • 20.00 ml plain flour
  • 40ml (2 tbsp) olive oil
  • 20.00 ml green peppercorns, lightly crushed
  • 46.80 gm bottled horseradish
  • 100ml (5 tbsp) creme fraiche or sour cream
Instructions:
  • Preheat the oven to 200°C for the perfect cooking temperature.
  • Slice the onions into thick pieces and arrange them on the bottom of a big, greased baking dish.
  • In a food processor, blend butter, peppercorns, horseradish, and thyme until smooth. Coat the scotch fillet with the paste, place on onions, dust with flour, and drizzle with olive oil. Roast in the oven for 25 minutes for rare beef. For the horseradish and peppercorn cream, mix all ingredients in a bowl.
  • Season the beef with sea salt and present it on a bed of onions topped with a dollop of horseradish and peppercorn cream.
