Delicious and untested member recipe.
Ingredients:
  • 1 red capsicum, diced
  • 1 medium red onion, diced
  • 400g beef mince
  • 2.50 gm paprika
  • 2.50 gm cumin
  • Juice of 1 lime
  • 18.20 gm olive oil
  • 8 tortillas
  • 125.00 ml natural yoghurt
  • 1 avocado, mashed
  • 21.00 gm lemon juice
  • 250.00 ml cheddar cheese, grated
  • 1 small red chilli, deseeded & finely chopped (optional)
  • 2 ripe tomatoes, chopped
  • 125.00 ml coriander, finely chopped
  • 9.10 gm olive oil
Instructions:
  • Mix together diced capsicum, chopped onion, ground mince, paprika, cumin, extra virgin olive oil, and juice from half a lime. Season with salt and pepper to your liking, then allow the flavors to meld together by marinating for about 5 minutes.
  • Combine creamy mashed avocado with a squeeze of fresh lemon juice in a small bowl.
  • 1. Preheat a frypan over high heat before adding the meat mixture. Cook while stirring occasionally for 5 minutes until the meat is nicely browned and veggies are slightly softened. Remove from heat and add the rest of the lime juice.
  • Heat up the tortillas according to the package instructions, then wrap them in a clean tea towel to keep them warm.
  • In a small bowl, mix together all ingredients for the salsa and adjust seasoning as needed. Chill in the refrigerator until serving.
  • Serve the meat mixture, salsa, avocado, cheese, and yogurt in individual bowls for a fun and interactive meal where everyone can create their own delicious filling.
