Savoury burritos filled with rice, seasoned beef, gooey cheese, and fresh vegetables - a delicious and satisfying meal.
Ingredients:
  • 375.00 ml Spicy Mexican mince (reserved from related recipe)
  • 9.20 gm olive oil
  • 150g cup mushrooms, sliced
  • 250.00 ml red onion, roasted
  • 250.00 ml roasted red capsicum, sliced
  • 400.00 gm Pea and green onion rice (see related recipe)
  • 4 jumbo flour tortillas
  • 250.00 ml grated tasty cheese
  • Sour cream, to serve
  • Guacamole, to serve
  • Lime wedges, to serve
Instructions:
  • In a medium saucepan over medium-low heat, gently cook the mince for 10 minutes, stirring occasionally, until warmed through.
  • In a large frying pan, heat oil over medium-high heat. Sauté mushrooms until browned and tender, about 5 minutes. Add onion and capsicum, cook until heated through, about 5 minutes. Stir in rice mixture and season with salt and pepper. Cook for 5 to 6 minutes until heated through.
  • Follow the instructions on the tortilla packet to heat them up. Lay a tortilla on a board, spoon 1/4 of the mince mixture in the center, add 1/4 of the cheese and 1/4 of the rice mixture. Roll up the tortilla, folding in the ends to seal the filling. Repeat with the remaining ingredients. Serve with sour cream, guacamole, and lime wedges.
