Tangy orange-cranberry jumbo muffins put a delightful spin on a classic recipe with minimal effort.
Ingredients:
  • 4 cups all-purpose flour
  • 2.5 cups fresh cranberries
  • 2 cups white sugar, divided
  • 1 large orange, zested and juiced, divided
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups sour cream
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while preparing 12 jumbo-sized muffin cups with paper liners.
  • Combine the flour, salt, and baking soda in a bowl and mix well.
  • Mix together fresh cranberries, a touch of sugar for sweetness, and the fragrant orange zest in a separate bowl. Stir well until every cranberry is perfectly coated with the delicious mixture.
  • In a large bowl, whisk eggs and gradually add sugar while whisking. Keep whisking and slowly drizzle in oil. Mix in vanilla. Alternate adding dry ingredients and sour cream to the egg mixture. Gently fold in cranberry mixture and 2 tablespoons of orange juice.
  • Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the centers comes out clean. If needed, rotate pans after 20 minutes.
