Budget-friendly jumbo chilli con carne burritos with black beans for extra volume. Easy, flavorful dinner ready in 30 minutes. Save money by using block cheese and Coles Simply Tomato Paste. Transform leftovers with Savvy Dinner Plan.
Ingredients:
  • 220g (1 cup) medium-grain white rice
  • 18.40 gm vegetable oil
  • 500g pkt Regular Australian Beef Mince
  • 40g pkt Mild Mexican Seasoning Mix
  • 44.40 gm Simply Tomato Paste
  • 420g can black beans, rinsed, drained
  • 75g (1/2 cup) frozen corn
  • 4 jumbo flour tortillas
  • 85g (1/3 cup) sour cream
  • 80g (1 cup) coarsely grated Cheddar Cheese
  • 1 tomato, finely chopped
  • Fresh coriander leaves, to serve
Instructions:
  • Prepare fluffy and perfectly cooked rice by following the package instructions for the absorption method.
  • Heat oil in a large frying pan over medium-high heat. Sauté the onion for 5 minutes until it begins to soften. Brown the beef by breaking up lumps with a wooden spoon for another 5 minutes.
  • Combine the seasoning mix in the pan and stir well, then add the tomato paste. Cook for 30 seconds before adding the beans, corn, and 185ml (3/4 cup) water. Season to taste. Cook and stir occasionally, gently pressing on the beans to break some up while leaving some whole, for 6-8 minutes until the mixture thickens and the mince is cooked through.
  • Follow the packet directions to heat the tortillas. Spread rice and beef mixture down the center of each tortilla. Add a dollop of sour cream. Sprinkle with cheese, tomato, and coriander. Roll up the tortillas, folding in one end to enclose the filling. Serve and enjoy!
