Budget-friendly one-pan Mexican beef rice that's hassle-free and family-friendly. Rice absorbs rich flavors, perfect for tacos and burritos. Top with sour cream, avocado, and cherry tomatoes for a fresh twist.
Ingredients:
  • 18.20 gm olive oil
  • 500g Beef 3 Star Regular Mince
  • 1 red capsicum, deseeded, coarsely chopped
  • 1 red onion, coarsely chopped
  • 30g packet taco seasoning
  • 44.40 gm tomato paste
  • 300g (1 1/2 cups) long-grain white rice
  • 400g can black beans, rinsed, drained
  • 1 tsp Organic Chicken Stock Powder
  • 120g (1 1/2 cups) coarsely grated cheddar
  • Sour cream, to serve
  • Sliced avocado, to serve
Instructions:
  • 1. Preheat the oven to 200°C/180°C fan forced. 2. Heat oil in an ovenproof frying pan over medium heat. 3. Brown the beef by cooking for 5 minutes, breaking up any lumps with a wooden spoon. 4. Push the beef to one side of the pan, add capsicum and onion to the other side. 5. Cook and stir for another 5 minutes until the onion mixture softens.
  • Combine beef and onion, mix well. Add seasoning and paste, cook until fragrant. Stir in rice, then add beans, stock powder, and 750ml (3 cups) water. Bring to a boil.
  • Place the pan in the oven and bake for 25 minutes, or until the liquid is absorbed and the rice is tender. Sprinkle with cheddar and bake for an additional 10 minutes until melted and golden. Top with sour cream, avocado, season to taste, and serve.
