Savory cornbread taco bake combining seasoned beef, tomatoes, green chilies, cheese, corn, and chili beans in a delicious one-pan meal.
Ingredients:
  • 1 pound ground beef
  • 3 tablespoons taco seasoning
  • 10 ounce can tomatoes with green chilies (such as Rotel® Original)
  • 1 (8.75 ounce) can drained corn
  • 1 (15.5 ounce) can chili beans
  • 4 ounces sharp Cheddar cheese, shredded
  • 1 (8.5 ounce) package cornbread mix
  • 1/3 cup milk
  • Sour cream and chopped green onion for garnish
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Cook ground beef in a deep cast iron skillet over medium heat until no longer pink, breaking it into crumbles, for 5 to 7 minutes. Remove excess grease. Mix in taco seasoning, tomatoes with green chilies, corn, and chili beans. Add Cheddar cheese and stir well.
  • Combine the cornbread mix, egg, and milk in a bowl until well mixed. Spread the batter evenly over the beef mixture.
  • Bake in the preheated oven for about 25 minutes, or until a toothpick inserted near the center of the cornbread comes out clean. Top each serving with a dollop of sour cream and a sprinkle of chopped green onions. Serve hot.
