Quick and easy taco bake with seasoned ground beef, cornbread base, melted Cheddar cheese, and crunchy corn chips. Ready in under an hour!
Ingredients:
  • 1 pound ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 1 cup salsa
  • 0.5 (15 ounce) can black beans, rinsed and drained
  • 1 (8.5 ounce) package corn bread mix (such as Jiffy®)

  • 1 egg
  • 1 tablespoon honey
  • 1 tablespoon corn oil
  • 0.5 cup corn
  • 1 cup shredded Cheddar cheese

Instructions:
  • Brown and crumble ground beef in a skillet over medium heat for 7 to 10 minutes; drain excess grease. Mix in taco seasoning, salsa, and black beans. Remove from heat.
  • Prepare a 9-inch pie pan or casserole dish by greasing it.
  • In a bowl, blend corn bread mix, milk, egg, honey, and corn oil until smooth. Gently fold in corn kernels. Spread batter evenly in a pie pan. Top with seasoned ground beef, Cheddar cheese, and crunchy corn chips.
  • Start by placing in a cold oven, then set the temperature to 350 degrees F (175 degrees C). Bake until the sides are golden brown, about 30 to 35 minutes.
