Family-friendly taco bake that's quick and simple to prepare - a crowd-pleaser for sure!
Ingredients:
  • 1 large red onion, finely chopped
  • 500g lean beef mince
  • 345g Jumbo Taco Kit
  • 1 green capsicum, deseeded, finely chopped
  • 400g can kidney beans, rinsed, drained
  • 100g (1 cup) grated colby cheese
  • Finely shredded iceberg lettuce, to serve
  • 1 tomato, chopped
  • 1 avocado, chopped
  • Lime cheeks, sour cream to serve (optional)
  • Chopped fresh chilli, to serve (optional)
Instructions:
  • 1. Preheat oven to 180°C/160°C fan forced. 2. Heat oil in a large non-stick frying pan over medium-high heat. 3. Sauté onions for 3-4 minutes until softened. 4. Add garlic and cook for 30 seconds. 5. Brown the mince, breaking up any lumps with a wooden spoon.
  • Mix in the taco seasoning and bell pepper. Cook for 3-4 minutes until the bell pepper softens slightly. Add the beans and cook for 2-3 minutes, stirring occasionally, until heated through. Remove from heat.
  • Evenly distribute the beef mixture into the taco shells, placing them upright in a baking dish close together for support. Top with cheese and bake for 15-20 minutes until golden and the cheese is melted.
  • Garnish the tacos generously with lettuce, tomato, avocado, and taco sauce. Serve alongside sour cream, lime wedges, and chili for an extra kick, if desired.
