Spicy, cheesy cornbread bursting with flavor.
Ingredients:
  • 150.00 gm coarse polenta (not instant), plus extra to sprinkle
  • 115g plain flour
  • 55g caster sugar
  • 6.00 gm baking powder
  • 2.50 gm bicarbonate of soda
  • 250.00 ml grated vintage cheddar
  • 1 small red chilli, seeds removed, very finely chopped
  • 310ml buttermilk
  • 1 egg
  • 40g butter, melted
Instructions:
  • Preheat your oven to 180°C and prepare a 25 x 11cm loaf pan by greasing and lining the base.
  • Combine polenta, flour, sugar, baking powder, baking soda, cheese, chili, and 1 teaspoon of salt in a bowl, stirring well.
  • Mix together buttermilk, egg, and butter in a separate bowl. Add to the dry ingredients and combine. Pour the mixture into a pan, sprinkle extra polenta on top, and bake for 30 minutes or until a skewer inserted into the center comes out clean.
