Spicy, cheesy cornbread bursting with flavor.
Ingredients:
150.00 gm coarse polenta (not instant), plus extra to sprinkle
115g plain flour
55g caster sugar
6.00 gm baking powder
2.50 gm bicarbonate of soda
250.00 ml gratedvintage cheddar
1 small red chilli, seeds removed, very finely chopped
310ml buttermilk
1egg
40g butter, melted
Instructions:
Preheat your oven to 180°C and prepare a 25 x 11cm loaf pan by greasing and lining the base.
Combine polenta, flour, sugar, baking powder, baking soda, cheese, chili, and 1 teaspoon of salt in a bowl, stirring well.
Mix together buttermilk, egg, and butter in a separate bowl. Add to the dry ingredients and combine. Pour the mixture into a pan, sprinkle extra polenta on top, and bake for 30 minutes or until a skewer inserted into the center comes out clean.
