Homemade bread is the ultimate taste sensation.
Ingredients:
  • 175g strong (baker's) flour*, sifted with 1 tsp bicarbonate of soda
  • 150g coarse polenta (cornmeal)*
  • 5.00 gm caster sugar
  • 60.00 ml pepitas (pumpkin seeds)
  • 60.00 ml poppyseeds, plus extra to sprinkle
  • 75g grated tasty cheese
  • 1/2 tsp dried chilli flakes
  • 300ml buttermilk
  • 1 egg
Instructions:
  • Preheat your oven to 180°C and grease a 7cm-deep, 9cm x 20cm loaf pan.
  • Combine flour, soda, polenta, sugar, seeds, cheese, chilli, and 1 teaspoon of salt in a large bowl, stirring until well mixed.
  • Whisk together buttermilk and egg, then combine with flour using a fork. Transfer the mixture into the loaf pan, sprinkle extra poppyseeds on top. Bake for 25-30 minutes until a skewer inserted into the center comes out clean. Let it cool in the pan for 5 minutes, then invert onto a rack to cool completely. Enjoy with chili and herbed rice.
