Homemade bread is the ultimate taste sensation.
Ingredients:
175g strong (baker's) flour*, sifted with 1 tsp bicarbonate of soda
150g coarse polenta (cornmeal)*
5.00 gm caster sugar
60.00 ml pepitas (pumpkin seeds)
60.00 ml poppyseeds, plus extra to sprinkle
75g gratedtasty cheese
1/2 tsp dried chilli flakes
300ml buttermilk
1egg
Instructions:
Preheat your oven to 180°C and grease a 7cm-deep, 9cm x 20cm loaf pan.
Combine flour, soda, polenta, sugar, seeds, cheese, chilli, and 1 teaspoon of salt in a large bowl, stirring until well mixed.
Whisk together buttermilk and egg, then combine with flour using a fork. Transfer the mixture into the loaf pan, sprinkle extra poppyseeds on top. Bake for 25-30 minutes until a skewer inserted into the center comes out clean. Let it cool in the pan for 5 minutes, then invert onto a rack to cool completely. Enjoy with chili and herbed rice.
