Indulgent one-pan meatballs in rich, cheesy tomato sauce with garlic bread croutons. Upgrade with store-bought pasta sauce for a quick, satisfying meal.
Ingredients:
  • 36.40 gm olive oil
  • 500g pre-made beef and pork meatballs
  • 170g bought garlic bread
  • 155g (11⁄2 cups) pre-grated 4 cheese blend
  • 1 brown onion, coarsely chopped
  • 3 garlic cloves, crushed
  • 3 anchovies, chopped
  • 44.40 gm tomato paste
  • 2 x 400g cans diced tomatoes
  • 1⁄250.00 ml torn fresh basil leaves, plus extra small leaves, to serve
Instructions:
  • In a spacious, oven-safe frying pan, warm up 1 tbsp of oil over medium-high heat. Cook the meatballs, turning occasionally, for about 5 minutes until they are nicely golden. Then, move the meatballs to a plate.
  • Heat oil in a pan over medium-high heat. Sauté onion and garlic for 5 minutes until softened. Stir in anchovy and tomato paste, cook for 1 minute until aromatic. Add tomatoes and 2 tbsp water, bring to a boil then reduce heat and simmer for 10 minutes until thickened. Season with salt and pepper. Add meatballs back to the pan and simmer for 5 minutes until cooked through. Stir in basil before serving.
  • 1. Preheat the grill to medium-high heat. 2. Tear the garlic bread into chunky croutons and scatter half of the cheese over the meatballs. 3. Layer the garlic bread on top followed by the remaining cheese. 4. Drizzle the remaining 1 tbsp of oil over the mixture. 5. Grill for 5-10 minutes until the cheese is melted and golden. 6. Season to taste and sprinkle with extra basil before serving.
