Ingredients:
  • 500g lean lamb mince
  • 3 garlic cloves, crushed
  • 20.00 ml plain flour
  • 36.40 gm olive oil
  • 40.00 ml chopped parsley
  • 5.00 gm ground cumin
  • 5.00 gm ground cinnamon
  • 3 tsp ground coriander
  • 1 egg, beaten
  • Lemon, to serve
  • Pita bread, warmed, to serve
  • Sliced tomato, to serve
  • Torn iceberg lettuce leaves, to serve
  • Natural yoghurt, to serve
  • Fresh mint, to serve
Instructions:
  • 1. Preheat the grill to medium-high heat. Line the base of a 18cm x 28cm lamington pan with baking paper and grease lightly. 2. In a bowl, mix together lamb, garlic, flour, oil, parsley, spices, egg, salt, and pepper until well combined. 3. Press the mixture into an even layer in the pan.
  • Broil for 4 minutes until lightly browned. Drain off liquid, then flip onto a board. Remove paper, return meat to pan with sealed side down, and broil for 3-4 minutes until fully cooked. Slice into thin strips, squeeze lemon over, and stuff into pita with tomato, lettuce, yogurt, and mint.
