BBQ chicken & sweetcorn burritos

Delicious Mexican BBQ chicken topped with sweetcorn, tomatoes, and melted cheddar cheese.
Ingredients:
  • 55.20 gm vegetable oil
  • 800g chicken thigh fillets
  • 2 medium avocados, peeled and diced
  • 42.00 gm lime juice
  • 3 large tomatoes, chopped
  • 375.00 ml grated cheddar cheese
  • 4 corn cobs, husks removed
  • Mexican chilli powder, to sprinkle
  • 10 flour tortillas
  • Coriander leaves, to garnish
  • 1/2 iceberg lettuce, shredded
Instructions:
  • Lightly coat the corn with half of the oil and grill on a medium-high barbecue for approximately 10 minutes, turning occasionally for even cooking. Allow to cool before handling.
  • Brush your succulent thigh fillets with a drizzle of oil and gently dust them with spicy chili powder. Grill them on a barbecue flat plate for 5 minutes on each side, ensuring they are cooked to perfection. Then, elegantly transfer them to a serving board.
  • First, delicately remove the corn kernels from the cob using a small sharp knife. Mix the corn with the avocado and lime juice, then season with salt and pepper according to your taste preferences. Finally, thinly slice the chicken.
  • Grill the tortillas until warm, then set out all the fixings for everyone to assemble their own burritos. Sprinkle with fresh coriander for an extra burst of flavor.
