Delicious BBQ chicken pouches with tender chicken, sweet corn, and bell peppers, wrapped in foil for a simple and tasty summer meal.
Ingredients:
  • cooking spray
  • 4 boneless, skinless chicken breasts
  • 1 cup barbeque sauce
  • 1 (10 ounce) package frozen corn
  • 0.5 cup chopped green bell pepper
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and give 4 sheets of aluminum foil a quick spritz with cooking spray.
  • Place 1 chicken breast in the center of each piece of aluminum foil. Spread 1/4 cup of barbeque sauce over each chicken breast. Top with corn and green bell pepper. Fold and seal each pouch, ensuring enough air circulation inside. Place the pouches on a baking sheet.
  • Roast chicken in the heated oven until fully cooked, 18 to 29 minutes. Make sure it reaches an internal temperature of 165 degrees F (74 degrees C). Let steam escape by opening one end of the pouch before peeling open the top.
